Soba Noodle and Salmon Salad

A Japanese inspired meal that can be made in minutes but looks like it took lots of artistic effort!

Soba Noodle and Salmon Salad

ingredients

180g soba noodles
2 teaspoons grated fresh ginger
2 tablespoons soy sauce
1 teaspoon sesame oil
270g packet frozen Birds Eye Atlantic Salmon – Skinless Fillets
½ cup sliced cucumber
Finely sliced spring onion tops for garnish

instructions

step 1

Cook soba noodles following packet directions, drain and rinse under cold water until cold. Place into a bowl and add ginger, soy and sesame oil and toss well. Refrigerate until required.

step 2

Cook the two frozen Birds Eye Atlantic Salmon following packet microwave cooking instruction and flake into chunky pieces. Arrange soba noodles and flaked salmon onto serving dishes. Garnish with cucumber slices.
