Pan-fried chicken with fresh salad and pesto mayonnaise on crusty bread. Lovely for a light lunch!

ingredients

Spray oil
400g chicken tenderloins
1/3 cup whole egg mayonnaise
1 tablespoon Leggo's Pesto - Traditional Basil
1 cup gourmet lettuce leaves
½ avocado, sliced
4 cherry tomatoes, sliced
4 large slices sourdough or French bread stick

instructions

step 1

Spray chicken tenderloins with oil and pan-fry or barbecue until cooked. Meanwhile, combine mayonnaise and Leggo's Pesto.

step 2

Arrange lettuce, avocado, tomato and chicken on bread slices. Serve with pesto mayonnaise.
