Couscous Crusted Chicken & Corn Patties

ingredients

500g chicken mince
125g can Edgell Corn Kernels, drained
3 spring onions, finely sliced
1 teaspoon chicken stock powder
½ cup couscous
Oil for frying

instructions

step 1

Combine chicken mince, drained Edgell Corn Kernels, spring onions and chicken stock powder. Season with freshly cracked pepper.

step 2

Shape mixture into 6 patties and coat with couscous, cover and refrigerate for 30 minutes.

step 3

Heat oil in a non-stick frypan and shallow fry patties on a medium heat for 8 minutes on each side or until golden brown and cooked through. Serve patties with fresh salad or in a toasted bun.

Couscous gives a nice crunchy coating to the patty, if you do not have couscous, try using polenta or fresh breadcrumbs.
