| 1 onion, peeled and diced 500g chicken mince 1 egg ½ cup dry breadcrumbs 2 tablespoons chopped fresh parsley ¼ cup Leggo's Tomato Paste – Garlic & Herbs 420g can Edgell Four Bean Mix, drained 4 rashers short bacon, cut into thin strips |
Spray a small frying pan with oil and cook onion for 3-4 minutes, stirring occasionally.
In a large bowl, combine cooked onion, chicken mince, egg, breadcrumbs, parsley, Leggo's Tomato Paste and drained Edgell Four Bean Mix.
Place chicken and bean mixture in a baking paper lined 10cm x 18cm loaf pan. Top with bacon strips and cook in a preheated oven at 180°C for 40 minutes. Cut into slices and serve.
Serve with chutney or tomato salsa.
