Passionfruit Vanilla Slice

On his special day Dad will love to relax with a scrumptious vanilla slice and a cup of hot coffee.

ingredients

2 sheets puff pastry, thawed
600ml thickened cream
1 cup milk
1 teaspoon vanilla extract
1 tablespoon icing sugar
2 x 100g packets instant vanilla pudding mix
170g can John West Passionfruit Pulp in Syrup, reserving 2 tablespoons for Passionfruit Icing
1½ cups pure icing sugar, extra, sifted

instructions

step 1

Place each pastry sheet on a baking paper lined baking tray and prick well all over with a fork. Bake at 210°C for 10-15 minutes or until golden. When cooked, immediately place another baking tray on both puff pastry sheets to 'deflate'. Allow to cool.

step 2

Combine cream, milk, vanilla, icing sugar and John West Passionfruit in a large bowl. Add vanilla pudding mix and beat until thick and smooth (do not over beat as the cream will curdle).

step 3

Spread filling evenly over one of the cooked puff pastry sheets. Place second sheet directly on top to create a 'monster vanilla slice'. Refrigerate for 1 hour.

step 4

Combine reserved 2 tablespoons John West Passionfruit and icing sugar to make Passionfruit Icing. Spread with a spatula over slice. Allow to set in refrigerator. Cut into squares or fingers and serve.
