| 2 sheets puff pastry, thawed 600ml thickened cream 1 cup milk 1 teaspoon vanilla extract 1 tablespoon icing sugar 2 x 100g packets instant vanilla pudding mix 170g can John West Passionfruit Pulp in Syrup, reserving 2 tablespoons for Passionfruit Icing 1½ cups pure icing sugar, extra, sifted |
Place each pastry sheet on a baking paper lined baking tray and prick well all over with a fork. Bake at 210°C for 10-15 minutes or until golden. When cooked, immediately place another baking tray on both puff pastry sheets to 'deflate'. Allow to cool.
Combine cream, milk, vanilla, icing sugar and John West Passionfruit in a large bowl. Add vanilla pudding mix and beat until thick and smooth (do not over beat as the cream will curdle).
Spread filling evenly over one of the cooked puff pastry sheets. Place second sheet directly on top to create a 'monster vanilla slice'. Refrigerate for 1 hour.
Combine reserved 2 tablespoons John West Passionfruit and icing sugar to make Passionfruit Icing. Spread with a spatula over slice. Allow to set in refrigerator. Cut into squares or fingers and serve.
The vanilla slices can be served for other special occasions.
