Chick Pea & Roasted Nut Dip

A nutty and delicious dip for parties or everyday.

Chick Pea & Roasted Nut Dip

ingredients

½ cup roasted salted cashew nuts or almonds
400g can Edgell Chick Peas, drain and reserve 5 tablespoons liquid
2 teaspoons lemon juice
1/3 cup chopped fresh coriander
Olive oil for serving
Chopped cashew nuts for garnish

instructions

step 1

Place cashew nuts, drained Edgell Chick Peas, reserved liquid, lemon juice and coriander into a food processor and puree until smooth.

step 2

Spoon mixture into a serving dish, drizzle with a little olive oil and sprinkle with extra chopped cashews.

Almonds or macadamia nuts can be substituted for the cashew nuts.
