Minestrone For One

Minestrone is often made to serve a hungry family but it's just as easy to make a single serve using Edgell and Birds Eye vegetables.

ingredients

125g can Edgell Four Bean Mix, undrained
3 teaspoons Leggo's Tomato Paste
¾ cup frozen Birds Eye Country Harvest Mixed Vegetables
1 cup water or chicken stock
¼ cup macaroni pasta

instructions

step 1

Place undrained Edgell Four Bean Mix, Leggo's Tomato Paste, frozen Birds Eye Country Harvest vegetables, water and macaroni in a small saucepan. Bring to the boil and simmer for 10 minutes, stirring occasionally.

step 2

Serve minestrone with crispy toasted flatbread.

• To make stock use 1 teaspoon of stock powder to 1 cup water.
• Add 1 rasher of chopped cooked bacon.
• For a vegetarian option use vegetable stock.
