Potato, Bacon and Sauerkraut Patties

Try this for breakfast; creamy mashed potato, tangy Sauerkraut and smoky bacon in a pattie, Yum!

ingredients

1 teaspoon oil
3 rashers bacon, chopped
1 cup (100g) Edgell Instant Mash
1¼ cups boiling water
410g can Edgell Sauerkraut, well drained
2 tablespoons oil, for cooking

instructions

step 1

Heat 1 teaspoon oil in a large frying pan, add bacon and cook for 1-2 minutes. In a medium bowl combine Edgell Instant Mash and boiling water. Stir in Edgell Sauerkraut and cooked bacon, season with pepper.

step 2

Shape mixture into ½ cup patties. Heat 2 tablespoons oil in a frying pan add patties and cook for 2-3 minutes on each side or until golden brown.

step 3

Serve as part of a "big breakfast" or with barbecued Kransky sausages.

Chopped fresh herbs such as parsley or thyme can be added in step 2.
