A lovely light stir-fry of mixed vegetables, John West Atlantic Salmon and sweet chilli sauce.
| 100g rice noodles 1 tablespoon peanut oil 2 cups mixed stir-fry vegetables (broccoli, baby corn and julienne carrots) 1 packet chilled John West Atlantic Salmon, cut into pieces ½ cup sweet chilli sauce Juice of half a lime |
Prepare rice noodles following packet directions.
Heat peanut oil in a frying pan or wok; add vegetables and stir-fry for 2-3 minutes. Push vegetables to one side of pan, add chilled John West Atlantic Salmon pieces and stir-fry for 1-2 minutes.
Drain noodles and add to pan along with sweet chilli sauce and lime juice, gently toss together until all ingredients are coated with the sauce.
Add 1 teaspoon grated fresh ginger in step 2 when stir-frying the vegetables.
