Passionfruit Self Saucing Pudding

Try this delicious passionfruit flavoured oozy, gooey saucy pudding.....

ingredients

1 tablespoon butter, softened
½ cup caster sugar
1 egg, beaten
1 cup self raising flour
½ cup milk
170g can John West Passionfruit Pulp in Syrup
1 cup boiling water
30g butter melted

instructions

step 1

In a bowl, cream butter and sugar; add egg and beat well. Stir in self raising flour and milk. Pour mixture evenly into a greased 6-8 cup casserole dish.

step 2

Combine John West Passionfruit, water and melted butter together. Pour over pudding mixture.

step 3

Bake in a preheated oven at 180°C for 30 minutes. Serve hot with cream or ice cream.

Try slicing a banana over the base of the dish before pouring in the batter.
