| 425g packet frozen Birds Eye Southern Blue Whiting 1/4 cup pinenuts 2 cups firmly packed basil leaves 1 clove garlic, crushed 1/2 cup finely grated parmesan cheese 1/3 cup olive oil |
Cook frozen Birds Eye Southern Blue Whiting following packet directions.
Place pinenuts in a small saucepan and cook stirring for 1-2 minutes, or until golden brown. Allow to cool.
Place pinenuts, basil leaves, garlic and parmesan cheese into a food processor and process until finely chopped. With the motor running slowly add the oil in a thin stream until blended.
Serve cooked fish fillets with a spoonful of pesto and garnish with lemon wedges.
As a serving idea cut fish fillet in half lengthways and arrange on plate overlapping each other.
