Tex Mex Spare Ribs

Tasty, lip smacking spare ribs served with a bean salsa is sure to please the hungriest of crowds!

140g tub Leggo's Tomato Paste
1 small fresh chilli, finely chopped
¼ cup barbecue sauce
8 pork spare ribs

instructions

step 1

Combine Leggo's Tomato Paste, chopped chilli and barbecue sauce in a shallow dish. Add spare ribs and toss to coat well in marinade. Cover and refrigerate overnight.

step 2

Cook spare ribs on a heated barbecue for approximately 20 minutes (cooking times may vary due to the thickness of the ribs), brushing well with the marinade and turning ribs several times throughout cooking.

Serve accompanied with the bean salsa.

A Tex Mex style Bean Salsa makes a great accompaniment, mix together a drained 125g can Edgell Four Bean Mix, a drained 125g can Edgell Super Sweet Corn Kernels, 1 diced tomato and 2 chopped spring onions.
