Cannot view nutritional info: Calories Cholesterol Carbs etc As I am a diabetic I really need to know in all of my meals. Thanks and regards Sandy

ingredients

2 teaspoons oil
2 potatoes, peeled and chopped
2 finger eggplants, chopped
1 cup frozen Birds Eye Chopped Onions
600g packet frozen Birds Eye Create a Meal - Thai Green Curry
½ cup roasted cashew nuts

instructions

step 1

Heat oil in a wok or non stick frying pan, cook potato, eggplant and frozen Birds Eye Chopped Onions for 4-5 minutes or until tender.

step 2

Add frozen Birds Eye Create a Meal continue cooking following packet directions omitting oil and meat.

step 3

Stir in cashews and serve garnished with Thai basil.

Add a little extra water for a 'saucier' curry.

Add a squeeze of lime juice or chopped coriander with the cashews.
