180g linguine pasta
125g can John West Salmon Slices - Olive Oil Blend, reserve oil
½ red onion, grated
½ teaspoon brown sugar
¼ cup sun-dried tomatoes, sliced
6 stuffed olives, sliced
6 cherry tomatoes, halved
1 teaspoon balsamic vinegar
¼ cup basil leaves, torn

instructions

step 1

Cook pasta following packet directions.

step 2

Drain John West Salmon Slices and set aside, place reserved olive oil into a frying pan, add onion and brown sugar and cook for 2-3 minutes stirring continually.

step 3

Add sun-dried tomatoes, olives and cherry tomato halves and heat for 1 minute.

step 4

Drain cooked pasta and return to hot saucepan and add caramelized onion mixture, balsamic vinegar and basil tossing well.

Add a little salt to water when cooking pasta and serve pasta sprinkled with cracked black pepper.
