Glazed Tomato & Pineapple Chicken

Chicken cooked in a sweet and sour style sauce.

Glazed Tomato & Pineapple Chicken

ingredients

700g skinless and boneless chicken pieces
1 tablespoon plain flour
1 cup frozen Birds Eye Chopped Onions
½ red capsicum, de-seeded and sliced
220g can pineapple pieces, juice reserved
410g can Leggo's Tomato Puree
1 teaspoon grated fresh ginger

instructions

step 1

Coat chicken pieces in plain flour and pan fry in a lightly oiled frying pan for 4-5 minutes or until browned. Place into a greased casserole dish.

step 2

Sprinkle frozen Birds Eye Chopped Onions, capsicum and pineapple pieces over chicken. Combine Leggo's Tomato Puree, pineapple juice and ginger and pour over chicken.

step 3

Cover and bake in a preheated oven at 200°C for 1 hour.
