| 700g skinless and boneless chicken pieces 1 tablespoon plain flour 1 cup frozen Birds Eye Chopped Onions ½ red capsicum, de-seeded and sliced 220g can pineapple pieces, juice reserved 410g can Leggo's Tomato Puree 1 teaspoon grated fresh ginger |
Coat chicken pieces in plain flour and pan fry in a lightly oiled frying pan for 4-5 minutes or until browned. Place into a greased casserole dish.
Sprinkle frozen Birds Eye Chopped Onions, capsicum and pineapple pieces over chicken. Combine Leggo's Tomato Puree, pineapple juice and ginger and pour over chicken.
Cover and bake in a preheated oven at 200°C for 1 hour.
Serve with steamed rice and steamed Birds Eye Baby Beans.
