Tuna Brunch Melt

The perfect weekend brunch dish combining Tuna, thin omelette, tomato and cheese on bread.

Tuna Brunch Melt

ingredients

2 eggs
1 tablespoon milk
1 teaspoon chopped chives
Spray oil
4 slices bread, toasted
185g can John West Light Tuna in Springwater, drained
4 cherry tomatoes
1/2 cup grated tasty cheese
Light sour cream
Cracked black pepper for garnish

instructions

step 1

Beat eggs and milk, add chives.

step 2

Heat a non stick 25cm frying pan and spray with oil.

step 3

Pour the mixture into pan and swirl around making a thin omelette.

step 4

Cook on a medium heat until egg is set on top and golden brown underneath.

Cut omelette in quarters and place on each piece of bread. Top with John West Tuna, tomato and cheese and bake or grill until cheese is just melted. Finish with a spoonful of sour cream and freshly ground black pepper; serve immediately.
