| 1 tablespoon oil 1 cup frozen Birds Eye Chopped Onions 1 sweet potato, diced 1 tablespoon Moroccan spice 400g can chopped tomatoes 400g can Edgell Chick Peas, undrained 2 cups chicken stock Dukkah for garnish |
Heat oil in a large saucepan, add frozen Birds Eye Chopped Onions and the sweet potato, cook for 2 minutes. Add spice, cook for 1 minute stirring well.
Stir in tomatoes, undrained Edgell Chick Peas and stock. Bring to the boil, cover and simmer for 10 minutes.
Serve soup with warm Turkish bread and a sprinkle of Dukkah.
Dukkah is a blend of Middle Eastern mixed spices and seeds available from the supermarket or deli. Pumpkin can be used in place of the sweet potato in this recipe.
