Cute Bunny Cakes

The kids will love these fun cakes at Easter time or for birthday parties!

ingredients

90g butter softened
1½ cups self raising flour, sifted
¾ cup caster sugar
2 eggs, at room temperature
1 teaspoon vanilla essence
1 tablespoon milk
20 white marshmallows for bunny's faces and ears
Blue or red jelly crystals
Sprinkles
Thin liquorice for whiskers
Red and blue piping gel for eyes and mouth

instructions

step 1

Place first six ingredients into a medium bowl; using an electric mixer beat on a low speed until combined.

step 2

Increase speed and beat on medium for 1 minute.

step 3

Spoon 2 tablespoons of the mixture into medium patty papers and bake in a preheated oven at 200°C for 12 minutes. Remove to wire rack to cool.
(For small cakes spoon 1 tablespoon of mixture into small patty papers).

step 4

When cakes are cool spread with icing and decorate edges with sprinkles or leave plain. Cut 10 marshmallows in half and place on cakes for bunnies faces. Allow 10 marshmallows for ears and cut each one into four pieces, dip one side into jelly crystals. Use 2 pieces for each bunny's ears. Pipe red gel for the mouths and blue gel for the eyes. Place a small dob of icing for nose and add liquorice for whiskers.
