125g can John West Mackerel Fillets in Brine, drained
½ cup light sour cream
½ cup finely diced cucumber
1 teaspoon finely grated lemon rind
2 teaspoons lemon juice
1 tablespoon finely chopped parsley

instructions

step 1

Lightly mash drained John West Mackerel Fillets and add remaining ingredients.

step 2

Serve with thin toast triangles, vegetable sticks, or crackers.
