Asparagus and Bacon Frittata

Tender pieces of asparagus baked in a cheesy egg mixture makes for the perfect lunch or dinner.

ingredients

2 rashers bacon, chopped
2 spring onions, finely chopped
4 eggs, lightly beaten
½ cup cream or milk
2 tablespoons plain flour
½ cup grated tasty cheese
425g can Edgell Asparagus Cuts & Tips, drained

instructions

step 1

Fry bacon and spring onions in a small pan for 1-2 minutes.

step 2

In a large bowl combine eggs, cream, plain flour and grated cheese and stir in drained Edgell Asparagus and the bacon mixture.

step 3

Pour mixture into a greased 23cm oven-proof dish and bake in a preheated oven at 180°C for 30 minutes or until set.
