ingredients

1 tablespoon oil
1 teaspoon ground cumin
½ teaspoon turmeric
½ cup frozen Birds Eye Chopped Onions
300g pumpkin cut into 1 cm dice
1 cup potato, cut into 1cm dice
400g can brown lentils, undrained
400g can tomato pieces, undrained
Flat leaf parsley for garnish

instructions

step 1

Heat oil in a large frying pan, add cumin, turmeric and frozen Birds Eye Chopped Onions and cook for 2 minutes.

step 2

Stir in diced pumpkin, potato, undrained brown lentils and undrained tomato pieces. Cover, and simmer over a low heat for 20 minutes or until pumpkin and potato pieces are cooked through.
