ingredients

2 x 410g cans Edgell Baby Carrots, undrained
2 tablespoons couscous
2 tablespoons boiling water
1 tablespoon slivered almonds
1 teaspoon butter
¼ teaspoon ground cumin
1 tablespoon honey

instructions

step 1

Prepare couscous by placing in a bowl, pour boiling water over, cover and stand for 2-3 minutes.

step 2

Place almonds in a small saucepan, cook until golden. Add butter, cumin and couscous to pan, stir well and cook for 1 minute.

step 3

Place undrained Edgell Baby Carrots into a small saucepan and heat. Drain and drizzle with honey. Serve with couscous crumble sprinkled on top and garnish with chopped parsley.
