ingredients

2 x 110g cans John West Sardines in Oil, drained
1 clove garlic, crushed
2 tablespoons extra virgin olive oil
1 tablespoon chopped fresh parsley
Finely grated rind and juice of 1/2 lemon

instructions

step 1

Place drained John West Sardines into a shallow glass or ceramic dish. Place garlic, olive oil, parsley, lemon rind and juice into a bowl. Whisk to combine and pour over sardines.

step 2

Cover and marinate in refrigerator for 20 minutes. Serve as part of an antipasto platter or a salad meal.
