ingredients

Grated rind 2 lemons
1/3 cup lemon juice
¾ cup caster sugar
4 egg yolks
60g butter
170g can John West Passionfruit Pulp in Syrup

instructions

step 1

Combine all ingredients in the top of a double boiler. Cook over simmering water, stirring continuously for approximately 20 minutes or until mixture coats the back of a wooden spoon.

step 2

Pour into sterilized jars and seal airtight. Store in refrigerator and use as required.

A heatproof bowl placed over a saucepan of simmering water can be used instead of a double boiler.
