| 8 glace cherries ¼ cup vodka 300ml pineapple juice 200ml (small) bottle champagne 1 tablespoon chopped fresh mint |
In a small airtight container combine glace cherries and vodka. Marinate for a few hours or preferably overnight.
To serve; place 2 cherries and one or two teaspoons of the vodka into each glass. Half fill the glasses with pineapple juice, top up with champagne and garnish with mint.
Mango or apple juice is a great alternative to pineapple.
