| 500g chicken mince 1 cup fresh breadcrumbs 1 egg, beaten ¼ cup toasted pinenuts 2 tablespoon chopped fresh parsley 445g jar Leggo's Simmer Sauce - Italian Chicken Scallopini ½ cup chicken stock |
In a medium bowl combine chicken mince, breadcrumbs, egg, pinenuts and parsley. Shape mixture into 1 tablespoon sized balls, makes 24. Set aside.
Pour Leggo's Simmer Sauce - Italian Chicken Scallopini and chicken stock into a medium saucepan, bring to the boil, add chicken meatballs and simmer for 10-15 minutes or until cooked through.
Serve with cooked pasta, rice, or mashed potato.
Pork mince can be used as an alternative to chicken.
