Panzanella

A Mediterranean style crisp bread salad.

ingredients

8 slices ciabatta or Turkish bread, halved
6 garlic cloves, peeled
Spray oil
8 cherry tomatoes, some halved, some quartered
1/3 continental cucumber, diced
400g can Edgell Butter Beans, drained
5 pitted black olives cut into slivers
6 John West Anchovy Fillets in Olive Oil, well drained and cut into halves
1 teaspoon baby capers

instructions

step 1

Spray bread slices and garlic cloves with oil and fry in a non-stick pan until golden and crisp on both sides.

step 2

Arrange bread, garlic, cherry tomatoes, cucumber, drained Edgell Butter Beans, olives and drained John West Anchovies onto 4 serving plates. Sprinkle with capers and serve immediately.

Drizzle with balsamic vinegar for an extra "bite".
