ingredients

½ x 500g packet frozen Birds Eye Country Harvest - Broccoli & Cauliflower
2 tablespoons light cream cheese
1 tablespoon skim milk
1 tablespoon chopped fresh parsley
Cracked pepper
¼ red capsicum, de-seeded and cut into fine strips

instructions

step 1

Cook frozen Birds Eye Country Harvest vegetables following packet directions.

step 2

In a small bowl beat cream cheese until smooth, add milk and mix to combine. Stir in parsley and pepper to taste. Heat mixture in a microwave oven on High for 15 seconds.

step 3

Place cooked vegetables into a serving bowl, spoon cheese mixture over vegetables and garnish with red capsicum.

A dash of curry powder can be substituted for the parsley.
