| 2 skinless chicken breast fillets, cut into strips 2 teaspoons Mexican Seasoning 8 taco shells, heated 310g can Edgell Corn Kernels, drained 1 avocado, chopped 2 tomatoes, finely diced ½ cup light sour cream Chives for garnish |
Coat chicken strips in Mexican seasoning. Spray a frying pan with oil and heat; add chicken strips and cook for 3-4 minutes or until cooked through.
Fill heated Taco shells with cooked chicken, drained Edgell Corn Kernels, avocado and diced tomatoes. Top with sour cream and garnish with chopped chives. Serve immediately.
2 medium beef steaks (cut of choice) cut into strips, can also be substituted for the chicken.
