ingredients

500g beef mince
2 tablespoons Leggo's Tomato Paste
2 spring onions, finely chopped
1 egg, beaten
¼ cup dry breadcrumbs
1 tablespoon chopped fresh herbs (parsley, basil or oregano)
Lettuce leaves
4 hamburger buns
6 mushrooms, sliced and pan fried or barbecued
½ Spanish onion, peeled and cut into thin wedges, pan-fried or barbecued
8 semi sun-dried tomatoes

instructions

step 1

In a bowl combine beef mince, Leggo's Tomato Paste, spring onions, egg, breadcrumbs and herbs. Shape the mixture into 4 even sized burgers and pan fry or barbecue until cooked through.

step 2

Serve burgers in lettuce lined buns, top with pan fried mushrooms and onions. Garnish with sun-dried tomatoes.
