Quick Pork & Vegetable Curry

Pork and crunchy vegetables tossed in a curry flavoured sauce.

ingredients

Spray oil
3 teaspoons curry powder
1 teaspoon cinnamon
400g diced pork
Juice and rind ½ lime
½ cup salt reduced chicken stock
500g packet frozen Birds Eye Country Harvest - Carrot, Cauliflower, Broccoli & Sugar Snap Peas
2 cups steamed rice for serving
Cucumber for garnish

instructions

step 1

Spray a non-stick frying pan with oil and heat, add curry, cinnamon and pork. Cook for 3 minutes stirring continually.

step 2

Stir in lime juice and rind, stock and frozen Birds Eye Country Harvest Vegetables. Cover and simmer for 4-5 minutes, stirring occasionally.

step 3

Serve curry with steamed rice and garnish with cucumber.
