Salmon Burger

ingredients

500g potatoes, cooked and mashed
415g can Ally Pink Salmon, drained and flaked
2 spring onions, finely chopped
1 teaspoon grated lemon rind
2 tablespoons lemon juice
1 egg, beaten
¼ cup plain flour
1 egg, beaten
½ cup breadcrumbs
2 tablespoons oil for frying

instructions

step 1

Place mashed potato, drained and flaked Ally Pink Salmon, spring onions, lemon rind, juice and beaten egg in a bowl; mix until well combined. Refrigerate for 15 minutes.

step 2

Form mixture into patties and coat lightly in flour, beaten egg and breadcrumbs.

step 3

Heat oil in a shallow frying pan and cook salmon patties until golden brown.

Serve salmon burger in hamburger buns with lettuce, red onion and tomato slices.
