Passionfruit Mousse

Let the passionfruit taste just melt in your mouth with this sumptuous dessert.....

Passionfruit Mousse

ingredients

170g can John West Passionfruit Pulp in Syrup, reserving 1 tablespoon
2 eggs, separated
1/3 cup caster sugar
½ cup cream, semi-whipped
2 teaspoons gelatine dissolved in 2 tablespoons boiling water

instructions

step 1

Place John West Passionfruit, egg yolks and caster sugar in the top of a double boiler. Beat over simmering water until slightly thickened. Allow to cool.

step 2

Stir cream and dissolved gelatine into passionfruit mixture until well blended. Beat egg-whites until stiff and gently fold into passionfruit mixture.

step 3

Pour into a bowl and refrigerate until set. Spoon into serving dishes and serve drizzled with reserved passionfruit.
