| 8 snow peas (50g), thinly sliced 225g can pineapple pieces, drained 2 cups shredded cabbage 1 rasher lean bacon, finely sliced and cooked ¼ red capsicum, de-seeded and thinly sliced 15 frozen Birds Eye Fish Fingers cooked following packet directions |
Boil, steam or microwave snow peas until just tender, drain. Rinse under cold water; drain well.
In a large bowl combine snow peas, drained pineapple, cabbage, bacon and red capsicum and mix well. Arrange coleslaw onto serving plates and top with cooked Birds Eye Fish Fingers.
Drizzle with mayonnaise or French dressing.
