Fruit Combo Turnovers

Crispy puff pastry triangles filled with apple and passionfruit.

ingredients

170g can John West Passionfruit Pulp in Syrup
420g can pie apple
½ cup chopped semi dried apricots
2 sheets puff pastry, thawed
2 cups prepared custard
Cinnamon sugar

instructions

step 1

Reserve ¼ cup of the John West Passionfruit syrup. Combine remaining passionfruit, with apple and apricots.

step 2

Cut pastry sheets in half diagonally, spoon filling onto one half of each pastry triangle, fold pastry over and seal edges. Bake in a preheated oven at 220°C for 20 minutes or until puffed and golden.

step 3

Combine reserved passionfruit and custard, heating if desired. Serve fruit turnovers with passionfruit custard. Dust with cinnamon sugar just before serving.

Each pastry sheet can be cut into quarters which will make 8 turnovers in total. Cinnamon sugar is simply, ¼ cup caster sugar mixed with ½ teaspoon cinnamon.
