Baby Spinach and Bean Salad

A simple and tasty salad with a sweet, tangy dressing that is perfect to compliment many dishes.

ingredients

500g packet frozen Birds Eye Baby Beans
150g baby spinach leaves
1 red capsicum, de-seeded and cut into thin strips

Dressing:
2 tablespoons Balsamic vinegar
2 tablespoons olive oil
1 clove garlic, peeled and crushed
2 teaspoons brown sugar

instructions

step 1

Cook frozen Birds Eye Baby Beans following packet directions, rinse in cold water and drain well. Place all dressing ingredients into a screw top jar and shake to combine.

step 2

Arrange spinach leaves, capsicum and cooked beans onto a serving dish. Drizzle with dressing and serve immediately.

Cherry tomatoes can be used as an alternative to capsicum. For a lower fat version use a ready made fat free salad dressing.
