Chantilly Cream

A scrumptious light and fluffy cream to serve with Christmas pudding.

ingredients

2 egg-whites
300ml cream
1 tablespoon caster sugar
½ teaspoon vanilla essence
Nutmeg or cocoa for sprinkling

instructions

step 1

In a medium bowl beat egg-whites and caster sugar with an electric beater until stiff peaks form.

step 2

Whip cream and vanilla essence in a separate bowl until soft peaks form; gently fold egg-whites through cream mixture.

step 3

Serve with a fruit pudding and lightly dust with nutmeg.

For Brandy flavoured cream, replace vanilla essence with brandy essence.
