| 2 egg-whites 300ml cream 1 tablespoon caster sugar ½ teaspoon vanilla essence Nutmeg or cocoa for sprinkling |
In a medium bowl beat egg-whites and caster sugar with an electric beater until stiff peaks form.
Whip cream and vanilla essence in a separate bowl until soft peaks form; gently fold egg-whites through cream mixture.
Serve with a fruit pudding and lightly dust with nutmeg.
For Brandy flavoured cream, replace vanilla essence with brandy essence.
