Christmas Jewel Cake

A quick and delightful decoration for Christmas cake.

Christmas Jewel Cake

ingredients

700g fruit cake
50g brazil nuts
50g almonds
¼ cup multi glace cherries
¼ cup glace pineapple
2 tablespoons apricot jam
1 tablespoon brown sugar
1 tablespoon brandy or sherry

instructions

step 1

Place a fruit cake onto a serving plate. Arrange brazil nuts, almonds, glace cherries and pineapple on top of the cake.

step 2

In a saucepan heat together 2 tablespoons apricot jam, 1 tablespoon brown sugar and 1 tablespoon brandy or sherry until thick and syrupy. Allow the glaze to cool a little then spoon onto fruits. Finish with a festive ribbon.

For individual cakes simple cut the fruit cake into medium or small squares and finish as directed above.
