ingredients

2 slices short lean bacon
4 frozen Birds Eye Corn Fritters
1-2 tomatoes, thickly sliced
2 tablespoons grated parmesan cheese
2 small Turkish rolls
Parsley for garnish

instructions

step 1

Cut bacon in half lengthways and thread each onto a skewer to form a rippled effect. Place onto a baking tray with the frozen Birds Eye Corn Fritters.

step 2

Place tomato slices on a separate tray and sprinkle with parmesan cheese. Cook both trays together in a preheated oven at 200°C for 18 minutes. Heat the Turkish rolls in the oven during the last 5 minutes of cooking.

step 3

Split rolls in half, place the tomato slices over the base, top with corn fritters then bacon carefully removing skewers. Garnish with parsley.
