White Asparagus, Lime & Creme Fraiche

A delicious sauce made with creme fraiche (see tip), herbs and lime, with white asparagus.

ingredients

¼ cup creme fraiche or sour cream
1 teaspoon grated lime rind
2 tablespoons chopped fresh herbs (dill, chives, parsley, oregano)
10 fresh white asparagus spears, blanched

instructions

step 1

In a frying pan, gently stir together créme fraiche, lime rind and herbs and heat on medium for 30 seconds.

step 2

Add white asparagus and cook stirring gently for one minute.

step 3

Serve as a side dish with grilled chicken or fish.

Creme fraiche in French simply means 'fresh cream'. It actually is a mixture of sour and fresh cream. It has a 48% fat content and is very rich. Creme fraiche does not curdle in cooking therefore is ideal for sauces. Serve with 1 packet John West Atlantic Salmon, pan fried.
