| 125g butter ½ x 400g can sweetened condensed milk 250g packet Marie biscuits, crushed 1 cup coconut 1 teaspoon grated lemon rind Icing: 1¼ cups icing sugar 2 tablespoons lemon juice |
In a medium saucepan melt butter and sweetened condensed milk over a low heat. Mix biscuit crumbs, coconut and lemon rind in a bowl and add milk mixture, stirring until combined.
Press mixture into a lined slice pan 28cm x 18cm.
Sift icing sugar into a bowl and stir in lemon juice, mixing until icing is smooth. Spread lemon icing over biscuit base and refrigerate to set.
Cut into squares or fingers and store in an airtight container.
Crush biscuits in a food processor or alternately place in a plastic bag and crush with a rolling pin.
