Lemon Slice

No bake quick mix slice made in a just a minutes. Great to pop in school lunches or to have on hand.

ingredients

125g butter
½ x 400g can sweetened condensed milk
250g packet Marie biscuits, crushed
1 cup coconut
1 teaspoon grated lemon rind

Icing:
1¼ cups icing sugar
2 tablespoons lemon juice

instructions

step 1

In a medium saucepan melt butter and sweetened condensed milk over a low heat. Mix biscuit crumbs, coconut and lemon rind in a bowl and add milk mixture, stirring until combined.

step 2

Press mixture into a lined slice pan 28cm x 18cm.
Sift icing sugar into a bowl and stir in lemon juice, mixing until icing is smooth. Spread lemon icing over biscuit base and refrigerate to set.

step 3

Cut into squares or fingers and store in an airtight container.

Crush biscuits in a food processor or alternately place in a plastic bag and crush with a rolling pin.
