| 1 tablespoon water 90g butter 250g packet pink & white marshmallows 250g dark cooking chocolate ½ cup pistachio nuts |
Place water, butter and marshmallows in a saucepan and heat gently, stirring continually until marshmallows are melted. Break chocolate into squares and add to saucepan; remove from heat and stir until chocolate melts.
Stir in pistachio nuts and pour mixture into a lined 16 cm square pan or a log pan. Allow to cool before refrigerating to set. Cut into thin slices when required. Store in an airtight container in refrigerator.
Substitute pistachio nuts with:
• ¼ cup chopped red glace cherries.
• 2 Turkish delight bars, chopped.
• ½ cup chopped nuts e.g. macadamia, roasted hazelnuts.
• Chopped peppermint confectionary bar.
Cut into thin or thick slices as desired.
