| Spray oil 300g chicken mince 2 spring onions, chopped ½ x 500g packet frozen Birds Eye Stir Fry - Thai Style 2 tablespoons water 1 tablespoon peanut butter 1 tablespoon reduced salt soy sauce 4-6 lettuce cups |
Spray a frying pan with oil and heat. Add chicken mince and cook until lightly browned, breaking up any large pieces. Add spring onions and stir-fry for 1 minute.
Remove chicken and spring onions and set aside. Spray pan again, add Birds Eye Stir Fry vegetables, stir-fry for 3-4 minutes. Stir in water, peanut butter and soy sauce.
Return chicken mince and spring onions to the pan and heat for 30 seconds. Spoon into lettuce cups and serve.
Cut any large pieces of vegetables in halves or quarters.
