ingredients

2 teaspoons olive oil
1 medium onion, peeled and finely chopped
½ teaspoon ground chillies
1 teaspoon ground cumin
2 teaspoons brown sugar
400g lean beef mince
400g can tomato pieces, undrained
420g can Edgell Red Kidney Beans, drained
¼ cup Leggo's Tomato Paste
½ cup beef stock
2 cups frozen Birds Eye Country Harvest - Broccoli & Cauliflower
2 cups cooked long grain rice

instructions

step 1

Heat oil in pan, add onion and cook for 2-3 minutes or until tender. Add chillies, cumin and sugar and continue to cook for 1 minute.

step 2

Add beef mince, stirring until browned, add tomatoes, drained Edgell Red Kidney Beans, Leggo's Tomato Paste, stock and simmer for 5 minutes.

step 3

Stir in frozen Birds Eye Country Harvest vegetables and bring to the boil. Cook for 10 minutes or until tender. Serve with cooked rice.
