ingredients

1½ cups self-raising flour
2 tablespoons Leggo's Pesto - Traditional Basil
1 egg
2 tablespoons olive oil
½ cup milk

Topping:
Leggo's Tomato Paste
Trussed cherry tomatoes, halved
BBQ Chicken, shredded
Fetta cheese, crumbled
Frozen Birds Eye Corn Kernels
Fresh Basil leaves, torn
Cracked pepper to taste

instructions

step 1

Make Pizza dough by sifting flour into a bowl. Combine Leggo's Pesto, egg, oil and milk together; pour into flour. Mix to form a dough, knead lightly and divide into 8 portions; roll each into an 18cm round.

step 2

Spread each pizza round with 2 teaspoons Leggo's Tomato Paste and top with shredded roast chicken, ¼ cup frozen Birds Eye Corn Kernels, cherry tomato halves, crumbled Fetta cheese and basil leaves.

step 3

Turn up edges slightly, brushing dough with a little extra milk. Place on baking tray lined with baking paper and bake in a preheated oven at 220°C oven for 12 minutes.

Ricotta cheese can replace fetta cheese for a lighter flavour and texture.
