| 2 teaspoons oil 1 tablespoon butter 2 onions, peeled and sliced 4 x 200g pieces fillet steak Cracked black pepper for coating 1 clove garlic, peeled and crushed 140g tub Leggo's Tomato Paste ½ cup water 2 teaspoons balsamic vinegar Mashed potato for serving |
Heat oil and butter in a frying pan over a low heat. Add onions and cook for 10-12 minutes or until onions are golden brown and caramelised. Set aside and keep warm.
Lightly coat both sides of steak with cracked black pepper. Pan-fry steak until cooked as desired.
Remove meat from frying pan and keep warm. Add garlic to pan and cook for 1 minute; stir in Leggo's Tomato Paste, water and balsamic vinegar. Simmer ingredients for 1-2 minutes. Place on serving of mashed potato, top with caramelised onions and drizzle with tomato sauce.
Serve with a sweet potato mash. Birds Eye Sliced Onions may be used in this recipe.
