Lemon Almond Tuiles

Tuiles are a thin crisp wafer that can be served with coffee or an accompaniment to dessert.

Lemon Almond Tuiles

ingredients

125g butter
½ cup caster sugar
1 teaspoon grated lemon rind
2 teaspoons lemon juice
½ cup plain flour
¾ cup flaked almonds

instructions

step 1

Place butter, caster sugar, lemon rind and lemon juice in a medium saucepan, stir over a low heat until butter has melted. Remove from heat, cool for 5 minutes. Stir in plain flour and almonds.

step 2

Place dessertspoonfuls of the mixture onto baking paper lined oven trays allowing room for spreading. Bake in a preheated oven at 170°C for 8-10 minutes or until golden brown.

step 3

Remove tray from oven, leave biscuits to cool on tray for 2 minutes. Gently lift biscuits and drape over a rolling pin and leave to set. Repeat with remaining mixture.  When cold store in an air tight container. Biscuits can be served as a dessert with fruit, cream or ice cream.

Cook only 4-5 biscuits on one tray to allow for spreading and handling.
