Chicken Balls with Sweet Chilli Sauce
Lightly spiced chicken balls filled with the goodness of chick peas, served with sweet chilli sauce.
PREPARATION TIME: 10 minutes
COOKING TIME: 25 minutes
SERVES: 4-5
INGREDIENTS: 500g chicken mince 1/3 cup dry multi-grain or white breadcrumbs 3 spring onions, finely chopped 2 teaspoons Mexican, Moroccan or Indian seasoning 1 egg lightly beaten 300g can Edgell Chick Peas, drained and mashed 1/3 cup extra breadcrumbs for rolling Spray oil Birds Eye Whole Baby Beans and Corn Kernels for serving, cooked following packet directions Sweet Chilli sauce
INSTRUCTIONS: STEP 1 Combine chicken mince, breadcrumbs, spring onions, seasoning, egg and mashed chick peas in a bowl.
STEP 2 Measure mixture with a 1/4 cup as a guide and roll into balls in extra breadcrumbs. Place balls onto a baking paper lined oven tray and spray with oil.
STEP 3 Bake in a preheated oven at 200°C for 25 minutes. Serve with cooked Birds Eye Whole Baby Beans and Corn Kernels. Drizzle with sweet chilli sauce.
TIP: Grated carrot can be added to the mince mixture as a great way to add extra vegetables.

A quick substitute can be made by mixing together 3 tablespoons soy sauce and 1 tablespoon of dark brown sugar.
