What rich and varied cuisines we are exposed to here in Australia, from deliciously fresh and light Vietnamese to some of the yummiest English style fish & chips that are the best in the world. All things lamb are of course almost obligatory for Australia Day, not forgetting a real "Aussie" treat of a lamington cake, smothered in chocolate and coconut and filled with cream and raspberry jam.
