Sliced lemon fans

Lemon and Lime Fans make a simple yet stunning garnish on savoury dishes such as fish, veal and vegetables. Wash fruit and pat dry with paper towel. Using a sharp knife cut the lemon or lime into thin slices and you will need 2 – 3 for each 'fan'. Stack the slices on top of each other and make a cut from the centre to the peel edge on one side only. Gently twist the ends opposite ways and fan out a little. Finish with a sprig of fresh herbs.
